Scorpion Serrano

Each of the sauces I make start with an idea. This one started with an abundance of ripe serrano peppers (those green serranos you buy at the store, though flavorful, are not ripe). Serrano peppers are tasty but simple, and I just didn’t think they could carry a sauce on their own.

But with the Trinidad Scorpion peppers growing next to them, it made sense to pair these distant cousins together into something new. And they would need a spice that would bring this new sauce to a different level. So I went with celery seed… and if you’re a bloody mary drinker, you know that spice is what makes the drink (ok, maybe it’s the vodka). If you want to kick up any tomato drink, this sauce is for you.
