Who wouldn’t want a satsuma orange tree they could pick tasty fruit from? When given the chance to buy a couple of these trees, I lept at the chance. But if we’re going to have these fruits, there had to be a hot sauce we could make with them. And we thought our new family member Star deserved her own sauce. She’s not a pepperhead so we just went with an acronym.
This sauce starts with Scorpion peppers (Trinidad Scorpions to be fair but we’re taking artistic license here), Tangerines (an accessible alternative to the satsuma orange while we wait for those little trees to grow), And (grammar police may prefer that we use TA from tangerine), (and) Rhubarb (right out of my friend Paul’s garden). This sauce has a bright flavor with lots of heat, as you’d expect.
